The agave is grown in the Sierra Norte mountains of Oaxaca, Mexico, and is hand-harvested and cooked in traditional stone ovens. The whiskey is then aged in American oak barrels for a minimum of two years.The result is a whiskey with a complex and flavorful profile. The aroma is rich and inviting, with notes of cooked agave, citrus, and vanilla. The taste is smooth and mellow with a hint of sweetness, followed by a spicy finish. Sweet buttered cobs of corn, faint toasted spices, green corn husks, and peanuts on the nose. The palate is sweet, gentle, and refreshing, bathed in honey, with dried peel, sweet corn, toasted oak spices, and a late sensation of charred oak, burnt toast, and peppercorn. That slight burnt note just creeps into the finish.
