Single Estate grown Tequila Ocho Extra Aejo begins with hand-cut over-ripe 100% weber blue agave harvested from a single field at a time, always from within the famed Golden Triangle of Los Altos. After roasting for 72 hours, milling, fermentation & then distillation, the unaged tequila is moved into seasoned and over-used ex-American whiskey barrels for three years. The barrel aging process imparts a kissed agave note and slight oak, vanilla, toffee & more complexities. Harder to come by, a tequila afficionado will snatch this expression up if found at their premium purveyor of spirits.
