El Dorado's Single Barrel Collection presents single-distillate aged rums from three of the oldest working stills in the world, crafted at the height of the sugar and rum trade changing the world centuries ago. All of their rums begin with alluvial-grown sugarcane, and the first-boil molasses (50% sugar content) is mixed with water and their house yeasts resulting in a fermented wash between 7% and 8% abv. Rather than blend a number of expressions together, these SBC bottles are examples of what each heritage still is capable of producing. Each expression is aged for a minimum of 12 years in once-used American bourbon barrels, refashioned in their own cooperage, under lush tropical conditions below sea level and off the Demerara's coast. The EHP was created for the Edward Henry Porter Estate, nearly identical to Aeneas Coffey's original patent (continuous), crafted in native greenheart and nearly two centuries old.
