The brand takes its name from the Spanish literary character Don Quixote and was officially launched in 1934 following the end of the Prohibition era. Don Juan Serrall??s first began making rum under his family name in 1865, after buying a sugar-cane plantation and importing a pot still from France. In 1935, a large-scale distillery was constructed, and the brand underwent a significant expansion with the acquisition of Puerto Rican Distillers, Inc. in 1985. In 2006, Destiler??a Serrall??s was relaunched in the USA. The Don Q Rum collection includes a selection of white, gold, aejo (aged) and flavored rums. Water is sourced from the R??o Inab??n, which flows by the distillery just east of Ponce, and is used to dilute the molasses in preparation for fermentation. After fermentation, the liquid is distilled five times before it is aged in charred American oak barrels. The light and dark rums are then blended with Soleras (overproof rums from the barrel). In the case of Don Q Gran Aejo, the spirit is composed of a blend of rums aged between nine and 12 years, as well as Solera rums aged for around 50 years. When it comes to the creation of the Don Q Cristal rum, aging and blending are accompanied by charcoal filtration for a lighter flavor profile. All Don Q rums are bottled at the distillery.
