Overview: From the very beginning, Quivira has been committed to maintaining the integrity of the estate to make farming a long-term proposition. Quivira was among the first vineyards to become certified biodynamic in the United States, earning the certification in 2005. Since 1998, Quivira has been actively engaged in restoring Wine Creek, the Coho salmon and Steelhead trout spawning stream that winds through the center of the estate. The iconic 140-year-old Fig Tree, has been preserved as a landmark.The Dry Creek Zinfandel is made fruit hailing predominately Wine Creek Ranch in Dry Creek Valley. The blend is mainly Zinfandel, blended with Petite Sirah, Syrah, Barbera, Mouvedre, Malbec, and Montepulciano. Upon harvest, the grapes are gently destemmed and go through a 3-5 day cold soak in a combination of open-top and closed top fermenters. Natural malolactic fermentation occurs naturally throughout ranging sizes of barrels. The wine is then aged for ten months in a mixture of French, American, and Hungarian oak.Tasting Notes: Aromatically the wine lifts from the glass with notes of mullberry, blackberry, and warm mocha.
