Plantation Australia Double Aged Rum 2007 Australia's only rum made from cane, Plantation Australia 2007 is a masterful combination of pot and column still distillates. This pot-still rum is the world's first to be fermented with an uncommon yeast called Schizosaccharomyces pombe, lending it a very distinctive character. The spirit is first fermented for 12 days with Schizosaccharomyces pombe, a very rare yeast in the world of rum, and dunders; it then undergoes a three-day fermentation with Saccharomyces cerevisiae. An exclusive release in our Plantation Australia 2007 Rum range, this 14-years old rum has been double matured to intensify its deep, rich and complex flavor. Distilled at the Beenleigh Artisan Distillery in Queensland, it first aged for 13 years in ex-bourbon barrels. The 21 barrels selected by Alexandre Gabriel then made the sea voyage to Javrezac, in the Charente region of France, where they were aged for an additional year in French oak casks. Plantation Australia 2007 Rum is the perfect balance between rum styles and terroir. Its assertive personality reflects the richness of the Australian terroir and the savoir-faire of the makers at Beenleigh Artisan Distillery. After its initial ageing period in oak casks on site, it was then treated to an additional one-year ageing period in French barrels from Maison Ferrand. TASTING NOTESNOSE: Stone fruits such as peach, apricot with hints of fresh vanilla, coconut, raisins and floral notes of iris and lilac.PALATE: Cooked fruits, citrus with hints of smooth cacao.FINISH: Exotic fruits with notes of vanilla and hint of wood.
