Diplomatico is a rum the defies categorization. It's very existence complicates the old understanding of the rum category. The easiest way to categorize rum is by the area's colonial history: Spanish, French or British. This is a serious over simplification of this incredibly diverse spirit and the rums coming out of Diplomatico are a perfect example of why. Diplomatico uses a blend of multiple stills: the Barbet column, batch kettle, and a pot still. Unlike many rum distillers, warehousing is static, much more like whisky production. Various blends of molassaes and sugar cane honey are fermented and then distilled to create different weights of rum for blending. This collection gives us a window into the components the blender uses to create the house style. The Pot Still is the heaviest and is fermented from 100% cane honey. After a long slow fermentation, it's distilled on a copper pot built in Scotland and purchased by La Miel in 1959s. Aged statically in small American white oak barrels, there's no blending, marrying, ouillage or adulterations made during maturation. The distillery collection is one of the most interesting and unique lines to elucidate the complexity that exist in the creation of rum. Only 5,000 bottles were produced world wide of this limited edition offering. No sugar was added before bottling at 94 proof.
